Ever thought about turning your favorite hummus into a salad dressing? With this hummus-inspired recipe you can turn this healthy snack favorite into a quick dressing as a tasty accent for almost any meal.

First, let me explain: I don’t make my hummus from scratch. There’s no need to as I almost always have Ithaca Hummus in my fridge. This hummus is smooth & creamy, but most importantly, it is made with clean, minimal & fresh ingredients without any added sugars or preservatives. The Lemon Garlic flavor from Ithaca Hummus has been a favorite lately, so that is what I used to create a flexible recipe that is simple, endlessly customizable, and can go with just about any salad or veggie bowl!

It’s so easy to make, you’ll never feel too tired to throw it together, plus you can store this dressing in the fridge for up to one week to make even easier & readily available.

Simple Salad with Hummus Dressing

An easy & simple salad with a homemade zesty dressing

Ingredients

Hummus dressing:

  • ½ cup Lemon Garlic Ithaca Hummus

  • 1 tsp organic dijon mustard

  • 1 tsp of agave (or honey)
  • 1 tsp of lemon juice

  • 1/4 cup of water

Simple salad:

  • 5 cups loosely packed mixed greens
  • 1 cucumber, peeled & thinly sliced
  • 1 cup cherry tomatoes (each cut in half)
  • 1/2 cup of crumbled feta (vegan feta is used in this recipe)
  • 2 tbsp of crushed almond slivers
  • 1 tsp of black & white sesame seeds

Directions

Hummus dressing:

  • Add the lemon garlic hummus, Dijon mustard, agave, & lemon juice to a bowl & mix with a fork until well-combined.
  • Add in water in small increments until the desired thickness is achieved, then serve room temp or chilled!

Simple salad:

  • In a large bowl combine mixed greens, cucumber slices, cherry tomato halves, & crumbled feta.
  • Just before serving, crush almond slivers into small bits & sprinkle onto salad. Add dressing to taste & toss to combine. Serve immediately after topping with sesame seeds.
  • Enjoy!

  • Leftovers will keep in the fridge for up to one week!
